2017 FINGER LAKES 'SPICEBUSH' GEWÜRZTRAMINER
Gewürztraminer with floral and spicy characters like that of the surrounding Spicebush. Rosewater and pepper on the nose, with a rich, dry and textural palate from three days skin contact.
Hand-picked late in the season, chilled in a cool room overnight in baskets, crushed into bins and put back into the cool room for three days before pressing, settling and fermenting. The time on skins helped to extract spice, florals and body. Two months in oak and ten months on lees helped to fill out the middle palate.
